This makes sense not just for the green reasons, but also because traditional "dipping box" freezers have to be kept in incredibly good repair, or they start smelling to high heaven. (If you have ever been in an older, less-well-capitalized ice cream store, you will know just what I mean.) These should neatly avoid that problem, and be greener to boot.
